Easter Treat: How To!

Coconut Macaroons are one of my all time favorite desserts! They are so simple and the coconut is just delicious! Another reason I love them so much is they are very easy to get creative with. For Easter these last couple of years, I’ve been making these little bird nests that are so adorable! They are perfect for the easter season and they take under an hour to make!


I N G R E D I E N T S 

4 Egg Whites | 1/2 tsp Salt | 16oz Sweetened Coconut | Cooking Spray | Chocolate Chips | Egg Shaped Candy


-Preheat oven to 300 degrees

-Combine egg whites, salt, and coconut until blended.

-Spray mini muffin tray with Cooking Spray and drop 2tbsp of mixture into each muffin cup.

-Place thumb in center of each drop to make an indent and pack the sides and bottoms around the muffin cup.

-Bake 30 minutes or until lightly golden on the edges.  Let cool in muffin cups for 10 minutes and then remove to cool all the way.

-Melt some chocolate chips and pour into center of each nest. Place egg shaped candy of your choosing and you’re all done!



Meatless Fridays!

It’s that time of year again! If you didn’t already know, I am Catholic and participate in Lent, which means I can’t eat meat on Fridays. This really isn’t all that difficult for me, considering I try to limit my intake of meat for the most part, but sometimes I struggle with making a full, meatless meal that has tons of flavor & fills me up. So I decided that this year I would plan ahead and share the recipes that I found to be super delicious for each meal of the day! Let me know if you have any recipes that you swear by!


Banana Berry Bowl!


1 large frozen banana, peeled
¾ cup frozen raspberries
½ cup blueberries
1 teaspoon açai berry powder
30g (about 2 scoops) vanilla pea protein powder
1 cup water
1 teaspoon chia seeds

L -U-N-C-H

Better Than Tuna Vegan Sandwich


2 15oz cans chickpeas, rinsed and drained (or 3 cups cooked chickpeas)
1 shredded carrot
2 stalks celery, finely diced
1/2 small red onion, finely diced
Just Mayo or alternative vegan mayonaise, approximately 1/4 cup
1/2 tsp salt
1/4 tsp ground black pepper


Spicy Sweet Potato Black Bean Burgers


1/2 cup quinoa
1 can black beans, rinsed and drained
1 large sweet potato
1/2 cup diced red onion
2 cloves garlic, minced
1/2 cup chopped cilantro
1/2 jalapeno, seeded and diced
1 teaspoon cumin
2 teaspoons spicy cajun seasoning
1/4 gluten free oat flour (regular oat flour or oat bran will work)
salt and pepper, to taste
olive oil or coconut oil, for cooking
6 whole grain hamburger buns (gluten free, if desired)
For Avocado-Cilantro Crema:
1/2 large ripe avocado, diced
1/4 cup low-fat sour cream or plain greek yogurt
2 tablespoons chopped cilantro
1 teaspoon lime juice
dash of hot sauce, if desired
salt, to taste


Green Glow! 

I’m only 13 days into my clean eating resolution and the green juices are my absolute favorite part of each day!

It’s only been a short time since I started drinking them again, but I can already see & feel the difference! I have more energy and my skin looks healthier even with this dry, cold air!

I figured since I love it so much, I should share my favorite recipe!


  • Handful of spinach
  • Handful of kale
  • 1 peach (can be frozen)
  • 1/2 banana
  • 1 tbsp chia seeds
  • Wheatgrass Powder
  • Coconut oil (optional)

Add water and ice to make whichever consistency you would like and BLEND!

Back At It!

Okay y’all….. so I fell of the clean eating and workout wagon HARD! While I continued to run almost every morning and do nightly yoga, that doesn’t really mean much when I’m consuming enough pizza rolls for 4 people, like twice a day. I’m lucky that I haven’t gained any weight (thank you lord for my metabolism), but that also means I haven’t been improving and I’m starting to feel sluggish. So we are not going to do that anymore, especially with it being beach season and a vacation right around the corner!

So to help some of you that are in the same boat as me, I decided to share a simple day diet so you can get an example of what my daily intake will be like from now on. While this will not be the everyday plan (that would get super boring, super fast and drive me right back to the pizza rolls) it’s a way for you to see how I’m balancing each meal for my day.

A Lucky Treat!

Here we go, another St. Patty’s Day Post. But are you really surprised, we all know I’m obsessed with anything holiday related! I found a photo on pinterest for inspiration and fell completely in love! These tasty little treats look so official I had to make them! It doesn’t hurt that it’s super simple as well!

I used my usual sugar cookie recipe as always! Once you’ve finished baking your cookies, let them cool completely!  Next step is to melt your choice of chocolate. I went with dark chocolate because it is my favorite and I love the bitter-sweet combo! Dip the left corner into the chocolate and place on wax paper. Now it’s time to embellish! Before the chocolate hardens, grab your sprinkle of choice and cover as desired! Place in freezer until chocolate hardens back up and you are all done!!


Love Day Preparations!

Shout out to all those love birdies our there, Valentine’s Day is right around the corner + now is the time to start planning your romantic date! I have put together a list of my top 5 date night ideas that I think are perfect for those couples that don’t want to go overboard with the lovey dovey stuff! They range from a night out to a night in with your one and only, let’s begin!

1.) Plan an overnight trip to a city about an hour away from your home! It’s like a mini couple vacation! It’s a great way for you to experience a new place your companion without have to wake up and drive hours and hours the next day!


2.) Go to a new bar or restaurant that your both have never been to. Try the house drink and specials instead of order the usual pasta dish. That way no matter if it is terrible or an absolute treat, it will be a night to remember.


3.) Go out and see a scary movie! Choose anything that is the complete opposite of a Nicholas Sparks film! This idea really came from my first Valentine’s Day with Joey (because SOMEONE forgot to buy tickets to The Vow ahead of time + we had to see the Women In Black…) Even though at the time I was a little annoyed, it ended up being something we’ve continued every year since!


4.) Plan an indoor camping trip for two! It’s way too cold outside to be sleeping in a tent + not having a plumbing is hardly romantic! Light up your fire place, cuddle up in your sleeping bags, make some delicious s’mores, and watch a hilarious show on Netflix!


5.) Make a meal together! This is actually my favorite idea! It takes the pressure off of one individual and allows you to work together which also helps build your relationship! So set that table for two + make a fancy meal you both love!



2015, A New Start!

Here we are, the day before the new year! It’s crazy to think how fast 2014 went and it makes me a tad bit sad, but all that more excited to make this next year the best one yet! So obviously, with a new year comes all the new years resolutions and promises we make to hopefully make a change in our life. But honestly, how many of us actually stick to these goals? And if you’re anything at all like me, your resolutions are very broad, with no backing to really stick too…. Be healthier, workout more, etc. This year, it WILL be different!

This year I’ve chosen a few resolutions that all go along with each other. I have decided to start living a cleaner, active, more productive life. You can’t have one of these without the other! So, now I’m going to go a little more in detail with what I plan to do for each!

1.) A Cleaner Lifestyle!

So what I basically plan to do with this step is learn how to cook. I want to start making my own real meals! To keep it straight with you all, unless it just involves boiling water, I have no idea how to cook. I can bake anything, but cooking is not a top skill for me! I want to start making healthy, clean, amazing meals from scratch to really just take control of my inner self! I will be enlisting the help from my new book, ONE POT, which I received for christmas from my parents! I really suggest you all pick up a copy and try it for yourself! I seriously can’t wait to start!


2.) Keeping Active!

I will be the first to admit that ever since I left college and didn’t have the perfect gym right around the corner from my apartment, I’ve let myself go in terms of physical fitness! I do get random moments where all I want to do is run but eventually that goes away. This year, I want to try doing something different everything week. Whether it be beating my running time, yoga, going to a pure barre class, or spin class! And I feel like now that I’ve shared this on my blog, I have no excuse but to keep it up! Which leads me to my next goal…


3.) Productivity Is Key!

With these changes, I want to chronicle them as I go. I feel like it would be a great way for me to make sure I keep up with these goals I set for myself, but also inspire you all to do the same! I plan on posting “My Meal of the Week” as long as a “Making Moves” post to share how I’m keeping active!
